Classes are given in the home of classicaly-trained French chef Francis Foucachon, owner and chef of West of Paris, French Restaurant.

He was apprenticed as a teenager to "Mere Lea" ("Mother Lea"), one of the greatest chefs of her time, whose clientele was shared with Paul Bocuse, a famous French chef, who did much to popularize French food in the U.S."
