Chef Francis Foucachon
Francis Foucachon, a specialist in classical French cooking, was trained by one of the greatest chefs in the city of Lyon--his birthplace and the capital of gastronomy of France. He brings to Moscow his expertise in meat sauces. They're made from scratch from stock that is rich in flavor because it has cooked for hours in the perfect blend of ingredients. Stock is the foundation for all French classical cooking. As the Marquis de Cussy aptly stated, "the sauce cook is the enlighted chemist, the creative genius, and the cornerstone of the edifice of superlative cookery."
